Classic Christmas Dinner - Turkey Ballotine


The Turkey

Our wonderful fresh British turkey is boned and rolled around our homemade apricot stuffing and wrapped in thinly sliced cured ham.

The turkey is then cooked sous vide with its own gravy to ensure juiciness and succulence and to allow the turkey to absorb further flavour.

The Accompaniments

Pigs in blankets made with Yorkshire Dales pork miniature chipolatas and dry cured streaky bacon

Crispy roasted local potatoes

Honey roasted parsnips

Buttery Brussels sprouts and carrots

Fresh, homemade bread sauce

The Gravy

Using the bones, along with a mirepoix of carrots, celery and herbs we create a silky homemade turkey gravy which is vacuum sealed around our turkey.

It is packed with flavour, intensity and festive comfort.
